東京港醸造株式会社は、東京都港区芝にある23区唯一の酒蔵として、江戸時代に廃業した造り酒屋「若松屋」を再興して生まれました。醸造規模の小さいビル型蔵で、都心の水道水を高度浄水処理し仕込み水に用いながら、酒造りを行っています。代表銘柄「江戸開城（えどかいじょう）」は、江戸無血開城に由来したネーミングで、清らかな飲み口とともに歴史性を感じさせる一本です。近年はどぶろく・リキュール・甘酒なども手掛け、多様な酒造業態を展開中。

Tokyo Port Brewery (Tokyo Minato Brewery Co., Ltd.), located in the Shiba district of Minato City, Tokyo, is the only sake brewery operating within Tokyo’s 23 wards. It revived the historic sake house Wakamatsu-ya, which had ceased operations during the Meiji era, and produces sake within a compact four-story brewery. Using Tokyo’s water—after advanced purification—as its brewing water, the brewery crafts sake with a clean profile and urban character. Its flagship label, “Edo Kaijo,” references the historic “bloodless surrender of Edo Castle” and embodies both clarity and historical resonance. In addition to sake, the brewery offers doburoku, liqueurs, and amazake, demonstrating its commitment to variety and innovation.
