Yoshidaya Goshi Kaisha, founded in 1917 in Arie-cho, Minamishimabara City, Nagasaki Prefecture, is a historic brewery with over 100 years of tradition. The brewery is renowned for preserving the "Hanegi-shibori" method, a rare traditional technique using a massive oak beam to gently press the sake without mechanical force. Utilizing pure spring water from the foothills of Mount Unzen and locally grown sake rice, Yoshidaya focuses on meticulous, handcrafted brewing. Its flagship brands, "Bansho" and "Hanegi-shibori," are characterized by their rich umami and velvety texture, offering a unique flavor that reflects the warmth and dedication of the artisans.
