Aoki Shuzo Co., Ltd., founded in 1717 in Minamiuonuma City, Niigata Prefecture, is a venerable brewery with a legacy spanning over 300 years. Utilizing the pure meltwater from Uonuma, one of Japan's snowiest regions, the brewery adheres to traditional techniques to craft "Tanrei Umakuchi" sake—a style that is crisp yet rich in rice umami. Its flagship brand, “Kakurei,” is celebrated for its clarity and profound flavor profile, cherished as a refined "blessing of the snow country." Honoring its historical connection to Suzuki Bokushi, author of the Edo-period masterpiece Hokuestu Seppu, Aoki Shuzo continues to preserve and share the unique snow culture of Uonuma through its artisanal brewing.
